The OON Chicago dining concept is the next logical step for me. This is because the restaurant’s food focus plays to my strengths in Contemporary American and Southeast Asian cuisines. The broad range of Southeast Asian spices, herbs, ingredients and cooking techniques also offers me and our kitchen team a lot of creative opportunity to work with North American poultry, game, vegetable, meat and seafood…and by the way, I really like seafood.
One of the most important things about opening OON Chicago has not been only the food and drink, but picking the best possible location. I picked the West Loop area because I want us to be where Chicago’s serious diners go to find really different and exciting approaches to food. Frankly, I’m honored to be neighbors with some of the best chefs in the city, if not the country.
Another critical feature for me is service. I’m really thrilled and honored that we have Jon McDaniel as our General / Beverage Manager running OON Chicago’s front-of-the-house and beverage program! Jon and I are totally in synch as to how we should treat and serve our guests. With him out there, I know things will always be handled just right. And can’t forget my right arm in the kitchen, our Sous Chef Sean Currie. Sean’s presence guarantees things will run smoothly. He’s also an awesome creative asset and knowledgeable collaborator.
I am frequently asked why am I so passionate about what I do and what on Earth was I thinking when I decided to open a restaurant!? My answer is this, a huge part of the satisfaction I get from my work is to be a part of peoples’ lives when they enjoy themselves and are commemorating important moments… and that is really special to me.
It’s my hope that the unique food, specialty cocktails, beverage selection, attentive service staff and comfortable dining environment we offer at OON Chicago will add up to a really fun, casual elegant dining experience for everyone.
